- 3/4 cup jam or jelly of your choice (such as raspberry, strawberry, or apricot)

- Preheat your oven to 375°F (190°C). Grease a 15x10x1-inch baking pan, then line it with parchment paper. Grease the parchment paper as well. This will prevent the cake from sticking.
- In a small bowl, whisk together the flour, baking powder, and salt. Set aside.

- In a large mixing bowl, beat the eggs on high speed for about 5 minutes, until thick and lemon-colored. Gradually add the granulated sugar and vanilla extract, beating well after each addition.
- Gradually fold in the flour mixture, about 1/4 cup at a time, until well combined. Be gentle to avoid deflating the eggs.
