Ingredients:


1. 1 tablespoon olive oil or butter

2. 1 onion, finely chopped

3. 2 carrots, peeled and diced

4. 2 celery stalks, diced

5. 2 cloves garlic, minced

6. 6 cups chicken broth (homemade      or store-bought)

7.  Incorporate 2 cups of delectably         tender chicken, whether                       shredded or diced, a delightful yield from a perfectly roasted bird, paired harmoniously with 1 cup of your favored uncooked egg  noodles or pasta selection.

8.   1 cup uncooked egg noodles or            pasta of your choice

9.   1 teaspoon dried thyme

10. 1 bay leaf

11. Salt and pepper, to taste

12. Fresh parsley, chopped, for                   garnish (optional)

13. Lemon wedges, for serving                   (optional)

Instructions:



  • Warm up a generous drizzle of olive oil or melt butter in a spacious pot set over medium heat. Toss in the finely chopped onion, diced carrots, and celery, and sautΓ© them, giving an occasional stir, until they turn tender, which should take approximately 5 to 7 minutes.

  • Introduce the minced garlic into the pot, allowing its aromatic essence to permeate the air as it cooks for an additional 1-2 minutes, until it releases its delightful fragrance.


  • As you pour the savory chicken broth into the pot, gently drop in the bay leaf and sprinkle the dried thyme, enhancing the soup with layers of fragrant flavor.


  • Once the soup is simmering, add the cooked chicken and uncooked egg noodles. Simmer gently until the noodles are cooked through, about 10-12 minutes. Give the pot an occasional gentle swirl to ensure the noodles dance freely in the broth, preventing any chance of them sticking to the bottom.
