Ingredients:


4 cups broccoli florets

1 small onion, diced

2 cloves garlic, minced

4 cups chicken or vegetable broth

1 cup heavy cream

Salt and pepper to taste

1 carrot, peeled and diced

1 celery stalk, diced

Instructions:


Follow steps 1-4 from the previous recipe to sautΓ© the onion, garlic, and create the roux.


Add the diced carrot and celery to the pot along with the broccoli florets. Stir in the dried thyme, ground nutmeg, and bay leaf.


Pour in the chicken or vegetable broth and bring the soup to a simmer. Simmer gently for approximately 10-15 minutes, or until the vegetables yield to a fork's gentle prodding, indicating their tenderness.
